A simple and Easy Breakfast

This is among what I would make for myself when I am just too lazy but won't want to settle for toast and butter. I would fry my egg sunny side up and dish up this mixed veggie with a few dash of worchestershire sauce. Have you cooked your mixed veggies like this before? I am not sure exactly how I came to make it this way but I have been doing it for years when I was still living back home. I do like my mixed veggies this way and would make it to accompany my steak or fish.


Mixed Veggies with Worchestershire Sauce

2-3 handful of frozen mixed veggies
1-2 tbs veggie oil
Salt
Sugar (optional)
White pepper (optional)
1 tbs worchestershire sauce

1. Heat oil on medium in a wok or pan and slowly add the frozen mixed veggies. Stir and cover. 2-3min.

2. Uncover and stir. Add all the other ingredients and stir again. 30sec-1min.

3. Serve immediately with toast and fried egg or steak or even fish.

Green Beans with Egg

I just realised that I do not eat enough vegetables although I love them. Maybe because Michael is not a huge fan of vegetables and the vegetables that they sell at the asian supermarket usually came pre-packaged. Huge packages. So recently I got myself a (huge) bag of green beans. I actually prefer long beans but they are hard to come by and when they do they are usually not fresh and skinny. I like my beans to be fat!

I made this Green Beans with Egg to go with my Squid in Soy Sauce. Of course back home it was long beans instead of green beans but the taste is still there so I am happy. This recipe is very easy to make and would take you less than 20min from preparation to cooking to cleaning.

Green Beans with Egg

2 1/2 handful of green bean, cleaned and cut in half lenghtwise
2 garlic, thinly sliced
1 red chili, sliced
1 egg, whisked
Salt and sugar to taste
2-3 tbs oyster sauce
2 tbs vegetable oil
Water

1. In a wok, heat the oil and saute garlic. Slowly add water before the garlic becomes crunchy. Stir. *be carefulof splatter when you are doing this*

2. Stir in oyster sauce, salt and sugar and then only add green beans. Toss a little bit, increase heat to high and cover. 30second.

3. Uncover, add chili and egg, stir well.

4. Served hot with warm white rice.

Ramadhan Mubarak & Labor Day


It is a long weekend for the United States for Sept 1 is Labor Day. This year it also coincides with the first day of Ramadhan where all Muslims around the world will be fasting from dawn to dusk for the whole month before celebrating Eid. I am taking this advantage wishing all muslim Ramadhan Mubarak.



This Malaysian-ised baked beans was my favourite when I grew up. I usually have it for breakfast but I think it is also good for sahur (or suhoor or sehri or sahari in other languages) which is an Islamic term referring to the meal consumed early in the morning by Muslims before fasting. It is easy and fast to make.

Baked Beans with Deep Fried Egg


Serves 2-3

1 can baked beans -I used Malaysian made which comes in tomato sauce.
1/2 onion, sliced
1 red chili, sliced
3tbsp ketchup, if you use the regular baked beans
salt & pepper to taste
2-3 eggs, deep fried
2 tbsp veggie oil


1. Deep fry eggs and set aside

2. In a wok or pan, saute the onion, add in the baked beans and lightly stir.

3. Add salt and pepper, taste to your liking

4. Add chili and eggs. Gently stir.

Serves with toast.

Malay-styled Omelette / Telur Dadar Recipe


Telur is egg in Malay word. And I love eggs. Fried egg. Hard boiled egg. Soft boiled egg. Fried hard boiled egg. You name it and I would probably have had it or would have it. And when I dont know what to cook, this is what I would make. Telur dadar or malay styled omelette is something like omelette without the milk or cheese and instead we added onion, chili, salt and pepper. Some people would add veggies but I like mine with only onion and chili.



Telur Dadar
serves 1-2

2 eggs
half red chili, sliced
half onion, thinly sliced
salt and pepper
1 tbsp cooking oil


1. Beat the eggs in a bowl. Add the rest of the ingredients except oil and continue beating.


2. Heat oil in a wok or small shallow frying pan on low heat.


3. Add the eggs into the wok/pan and let it cook slowly. About 2 minutes.


4. When you see the sides of the egg getting brownish, flip it upside down and continue cooking for another minute or two.


Enjoy with a plate of warm white rice. You can also put a little bit of sweet chili sauce or sweet soy sauce on top. That is how I would normally eat my telur dadar.

Cheese Omelette


An ideal breakfast to me would be cekodok or nasi lemak or nasi goreng (fried rice) or roti canai/pratha or even mee goreng (fried noodle). Sometimes it would be instant noodle. Whatever it is, its just gotta be heavy. Sometimes I would just take cereal or waffle but I will get hungry again in an hour so that doesnt help. Michael on the other hand doesnt understand the concept of heavy breakfast. So for him, Id usually make cekodok or omelette or grilled cheese or just peanut butter sandwich.



For today, I made him cheese omelette. I used to have 'accidents' everytime I made this for him. The first 4-5 times, without fail it'l get burned on 1 side but he would still eat them. I only managed to not get it burned the last few times including today. I must say that actually today's is the prettiest omelette iv ever made. ;) Im not really sure why but maybe its got something to do with the fact that we'r now using gas stove rather than electric.
Cheese Omelette
2 eggs
1/4 cup milk
1 tbsp butter
1 slice cheese

1. In a small pan (8" diameter), heat the butter on low heat.

2. Beat the egg well and add milk. Continue beating until well mixed.

3. Pour into the heated pan. About 4-5min.

4. Put the cheese in the middle and slowly fold the egg into crescent shape.

5. Slowly press the edges so they stick to each other and to avoid the cheese from oozing out. 30sec.

6. Slowly flipped it over for another 30sec.

Belacan & Salted Fish Fried Rice Recipe


Thank you friends who participated in my "Let's play a guessing game". Yatie actually guessed the closest. She may not get the name but she was the only who saw the (bony)salted fish. :)

Actually that was the first time I made anything with salted fish. My good friend Bee Yinn of Rasa Malaysia gave me some last year during one of those times when she was flying home and had to clear her fridge/freezer. Thank you Bee Yinn! ;)

Anyways, Iv been meaning to make this kind of fried rice for ages but keep forgetting that I have the salted fridge in the freezer. So, on that lovely weekend, after getting some green bean from the supermarket, I got busy.

1 cup cooked day-old rice

2-3 shallot
2 garlic
4-5 thai chili (use more/less depending on how hot you like your rice)
1/2" belacan (if you're using powder form, use about 1.5 teaspoon)

half medium size onion, sliced into 1/4"
a few pieces salted fish, fried and cut into small pieces
Deep-fried anchovies (optional)
green bean, thinly cut (i prefer long bean but when i was at the store they looked old)
frozen mixed vegetables
2 tablespoon vege oil
salt, pepper and sugar to taste

1. Using mortal & pestel, pound shallot, garlic, thai chili and belacan or you can use the small food processor.

2. In a wok or pan, heat the oil on medium high. Add in the blended ingredients and stir until fragrant. About 30seconds.

3. Add in the rest of the ingredients and keep stirring. 1 min.

4. Add the rice and continue stirring until the rice and ingredients blend together. Taste and add salt/sugar/pepper until you're satisfied.

You can see from the picture how I like eating my fried rice. I prefer my egg fried with oil to sunny side up since I like the crunchiness of the edges. Pour some of the Lingham Chili sauce, cut some red chili, fry some prawn/fish cracker and voila! It was heaven!

Sambal Tumis with Deep-fried Hard-boiled Egg



This is what I made for myself the day after we arrived home from Virginia. We havent gone to the asian supermarket yet so I had to made do with whatever that I have and bought from the regular supermarket.



I needed something hot & spicy, filling and yet easy to make so I opted for these. Warm white rice with grilied prawn seasoned with old bay and sambal tumis deep-fried hard-boiled egg and some cucumber.

Since I have already posted the recipe for sambal tumis in my previous post, Im not going to post it again. You can of course get the recipe here at Sambal Tumis. ;)
